If you’re a fan of apple pie, give this recipe a go. I promise, you won’t be let down. This apple crumble pie comes together in about an hour, no need for any crazy prep. It’s got a simple shortbread crust holding a sweet, cinnamon apple filling, and a nice buttery crumble on top. Plus, a scoop of vanilla ice cream is a must. It’s a solid dessert for any occasion!


Ingredients
FOR APPLE PIE FILLING
75g granulated sugar
25g dark brown sugar
3g cinnamon
5g cornstarch
1 tablespoon water
35g salted butter
1g salt
540 g honey crisp apple, diced
8g lemon juice
FOR CRUST
100g salted butter cold, cubed
155g all-purpose flour
20g granulated sugar
1g salt
20g ice water
FOR CRUMBLE TOPPING
100g all-purpose flour
50g brown sugar
2g salt
48g salted butter, cubed
Dash of cinnamon





Process
FOR THE CRUST
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine all-purpose flour, sugar, and salt.
Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together.
Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
After 30 minutes, take the chilled dough out of the refrigerator and roll it out on a lightly floured surface to fit the size of your skillet. Carefully place the rolled-out dough into the skillet, tucking in or trimming the edges. Using a fork, poke the base of the pie crust. Then, bake at 375°F (190°C) for 25 minutes.
After removing it from the oven, set the pie crust aside and proceed to prepare the apple filling.
FOR APPLE PIE FILLING
In a saucepan, combine the diced apples, brown sugar, granulated sugar, butter, lemon juice, cinnamon, and salt.
Place the saucepan over medium heat and stir the mixture until the sugars dissolve and the butter melts.
Reduce the heat to low and simmer the mixture for about 15 minutes or until the apples have softened. Stir occasionally to prevent sticking.
In a separate bowl, combine cornstarch with water and pour it into the apple mixture. Stir until thickened, about 30 seconds.
Remove the saucepan from the heat and let the sauce cool down.
FOR CRUMBLE TOPPING
Mix together the all-purpose flour, granulated sugar, brown sugar, cinnamon, and salt.
Add cubed butter and use your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
FOR ASSEMBLY
Add the apple pie filling into your baked crust. Sprinkle the crumble topping evenly over the crust and apple filling, covering the entire surface.
Place the skillet back in the oven and bake at 425°F (218°C) for 12 minutes. Then, reduce the heat to 360°F (182°C)and bake for another 10 minutes or until the crust is golden brown.
Remove the skillet from the oven and let it cool for a few minutes before serving. You can serve the apple crumble pie warm or at room temperature. It pairs well with a scoop of vanilla ice cream.
